Seriously, if you can learn an entire language (that is made up of more words than just your damn name), then I don’t see why you can’t remember four different ways to physically assault your opponents!

If the Pokemon is able to know the entire English (or other, depending on dub) language…
It must be in the anime; as such, it is able to know more than four moves!
And if the Pokemon is only able to know four moves…
It must exist in the video game canon, where not a word is spoken by the trainer!

I always figured League regulations prevents you from having more than four moves. In fact, Pokemon League regulations are the reason for most arbitrary rules in the Pokemon-verse.

Are we sure they understand? Cuz to me it always seemed like they knew their attack names which filled their memory slot and then they just nod along with whatever else the trainer says.

I don't know what you mean by "grow". Team Rocket's been after Ash's pikachu since the first few episodes; it can't have been more than LvL10 at that point and they still thought it was the most powerful pokémon ever. The only evidence of actual growth has been evolution.
